§ 97.06. OUTDOOR GREASE TRAP REQUIRED.

  • Prior to the issuance of an occupancy permit under the City’s Building Code, all restaurants, as defined in Chapter 165, shall be required to install and maintain an outside grease trap in a manner that minimizes discharge into the City’s wastewater system. Upon request of the Wastewater Superintendent, the owner of the restaurant shall produce maintenance records to prove that the owner has been maintaining the outside grease trap. In the event that the Wastewater Superintendent determines that the grease trap is not being cleaned and maintained, or is discharging amounts of grease into the wastewater system that could lead to damage to the system or private property, the Wastewater Superintendent may, upon three days’ written notice, order that the outside grease trap be cleaned. In the event that said grease trap is not cleaned within said three-day period, the Wastewater Superintendent may have the outside grease trap cleaned and assess the costs of the same back to the owner.
